There is nothing that quite replaces the crisp cool crunch of Iceberg lettuce. Not to put the trendy new micro-greens down, it’s just that those dainty little-girl greens cannot begin to compare.
Iceberg Lettuce in Salads and Sandwiches
Iceberg lettuce has always been a favorite light summer salad green for eating with fresh homegrown tomatoes and cucumbers, or piled high on summertime grilled burgers and in BLTs. It’s also the lettuce that is most likely to be eaten by children, picky eaters and people who normally don’t eat salad greens. Iceberg is the lettuce everyone loves.
Iceberg Wedge Salad Recipe with Bacon Blue Cheese Dressing
Serves: 6
Prep time: 10 minutes
Ingredients
- ½ pound thick-sliced Bacon, cut across the grain into ¼-inch julienne
- 1½ cups real Mayonnaise
- 2 tablespoons fresh Lemon Juice
- 1 tablespoon coarsely ground black pepper
- 1 teaspoon Tabasco® Brand pepper sauce
- 2 tablespoons Buttermilk
- ½ cup crumbled Blue Cheese
- 1 head Iceberg Lettuce, cut into six or eight wedges
- ½ cup green Onion tops, thinly sliced
Directions
- Cook the diced bacon in a skillet over medium heat until crisp and brown.
- Remove bacon with a slotted spoon and allow to drain on paper towels. Set aside.
- Measure the mayonnaise, lemon juice, black pepper, Tabasco sauce and buttermilk into a medium-sized mixing bowl.
- Whisk the ingredients together to combine them well.
- Stir in the blue cheese crumbles so that they are well distributed throughout the dressing.
- Trim any brown from the end of the lettuce stem, but leave the stem and heart intact.
- Turn the head of lettuce so that the stem-side is up, and with a sharp knife, slice vertically down through the center of the lettuce to create six wedges.
- Place each lettuce wedge on a chilled plate and spoon on the Blue Cheese salad dressing.
- Garnish as desired with fried bacon bits and green onions.
- Serve immediately.
Main Dish Salad
This salad can be eaten on its own as a meal if you include a few extra ingredients like buttery croutons, flaked tuna, chopped tomato, slivered almonds and radish slices. Let your tastes and imagination be your guide. Try making a wedge salad using any other dressing you like as well. Iceberg Lettuce Wedge Salad is always a hit.
