Satay (saté) is the national dish of Indonesia. Bought from a satay street vendor, or relished in a five-star restaurant, this classic kebab can't be beat.

But there is no need to book the next flight to East Java. You can make your own satay at home. This versatile recipe works equally well with chicken, mutton, pork or firm tofu, but the dark meat of the chicken is a traditional choice for the standard peanut dipping sauce in the recipe below

Indonesian Chicken Satay Recipe with Peanut Dipping Sauce

Serves 6

Ingredients:

  • 2 tablespoons molasses
  • 4 tablespoons reduced-sodium soy sauce
  • 4 cloves garlic, crushed and minced
  • 1 tablespoon peanut or coconut oil
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1½ pounds boneless, skinless chicken, cut into one-inch cubes (either thigh or breast meat may be used)
  • 1/4 cup smooth natural peanut butter
  • 1/4 cup water
  • 2 tablespoons ketchup
  • 2 teaspoons Tabasco® Brand pepper sauce
  • 6 skewers

Directions:

  1. If you are using wooden skewers, soak them in water for several hours before cooking. This will keep them from catching fire during the grilling process.
  2. In a medium-sized mixing bowl, whisk the molasses, soy sauce, garlic, oil, vinegar, cumin and coriander until well combined.
  3. Remove 2 tablespoons of the marinade to a second bowl and set aside. (This bowl will be used to make your dipping sauce.)
  4. Place the chicken in a glass bowl or large plastic zipper bag, and pour the remaining marinade over the chicken. Seal and refrigerate, allowing the chicken to marinate overnight.
  5. To the dipping sauce bowl, add the water, peanut butter, ketchup and Tabasco sauce, and whisk until well combined. Cover and refrigerate until ready to use.
  6. Assemble the sate dividing the meat into six equal portions and threading each cube of chicken onto the skewers.
  7. Grill over hot coals as usual, or…
  8. Broil the sate skewers on the top oven rack for 12 to 16 minutes, turning as necessary – or until the chicken is cooked through and juices run clear.
  9. Serve the hot saté with the peanut dipping sauce on the side, and a crisp cool salad to complete your meal.
