Crock-pot Beef Roast in Beer served with hot Navy beans is an excellent menu choice for hectic workdays – or days when the cook would rather be snuggled up with a book by the crackling hearth than spending hours hovering over a stove.

Crock-Pot Beef Roast in Beer Recipe, Serves 6 – 8
Ingredients:
- 2 – 3 pound beef roast
- Salt and Black Pepper, to taste
- 3 tablespoons butter
- 3 – 5 medium onions, peeled and sliced
- 2 – 3 garlic cloves, crushed and minced
- 1 cup beef broth
- 1 cup beer (any kind will do)
- 2 tablespoons brown sugar
- 2 tablespoons Creole mustard (Dijon, if Creole is unavailable)
- 2 tablespoons apple cider vinegar
- 1 tablespoon cornstarch dissolved in ¼ cup water
Instructions:
- Generously season the roast with salt and pepper to taste, and place it in slow cooker.
- Melt butter in a large skillet and sauté onions until they are nicely caramelized. Add garlic.
- Mix together the beef broth, beer, brown sugar, mustard and vinegar, and add to the onions.
- Continue cooking until the mixture is heated through, then pour over roast in the Crockpot.
- Place lid on the slow cooker and set it to cook on high for approximately 6 hours, or on low for about 8 hours.
- When tender, remove roast to a platter to rest.
- Pour the cornstarch slurry into the meat juices, and continue cooking until gravy thickens.

Ingredients:
- 1 pound dried Navy beans
- 6 cups water
- 1 cup bell pepper, chopped
- 1 cup onion, chopped
- 2 garlic cloves, crushed and minced
- ½ teaspoon rubbed sage
- 1 bay leaf
- ¼ cup fresh parsley, chopped
Instructions:
- Rinse and sort Navy beans.
- Place beans and water in the crock pot.
- Add onion, bell pepper, garlic, sage and bay leaf.
- Cover the slow cooker, and set to cook on high for approximately 6 hours or on low for about 8.
- Beans should be tender and sauce should be creamy when done.
- 30 minutes before serving, stir in fresh chopped parsley.
- Check beans for seasoning and add salt and pepper, to taste, at this time.
